A simple yet delicious recipe to use up excess Radishes

If you’re looking for a fresh and healthy salad that celebrates the flavours of your garden, look no further than this delicious radish and fennel salad recipe!

This recipe is perfect for showcasing the bright, peppery taste of fresh radishes and the subtle, anise-like flavour of fennel. 

We’ve added a lemon dressing as we think it complements this radish and fennel recipe perfectly, but feel free to experiment with other flavours too.

What are we using for this salad?

But before we get to the recipe, let’s talk a little bit about the ingredients. 

Radishes are one of the easiest vegetables to grow, making them a perfect choice for new gardeners. 

They are a cool-weather crop that are sown directly in the ground as soon as the soil can be worked in the spring. They mature quickly, usually within 30 days, and you’ll harvest them as soon as they are large enough to eat. We like this variety!

Fennel, on the other hand, is a little more challenging to grow but well worth the effort. It is a tall, feathery herb with a bulbous white base that can be sliced thinly and used in salads like this one.

Ingredients:

  • 1 bunch of radishes, thinly sliced
  • 1 fennel bulb, thinly sliced
  • Small handful of fresh parsley leaves, chopped
  • 2 tablespoons of lemon juice
  • 1 tablespoon of honey
  • 3 tablespoons of extra virgin olive oil
  • Salt and freshly ground black pepper to taste

Directions:

  1. In a large bowl, combine the sliced radishes, sliced fennel, and chopped parsley.

  2. In a small bowl, whisk together the lemon juice, honey, and olive oil. Season with salt and pepper to taste.

  3. Drizzle the dressing over the salad and toss gently to coat.

  4. Serve immediately, garnished with a few extra parsley leaves if desired.
